One of the healthiest dollops combines olives (black or green) with canola oil. Let’s start with this recipe for Spanish Olive Drizzle—a zesty vinaigrette for finishing grilled vegetables, chicken, fish, pork or beef. Spanish Olive Drizzle Makes about 1 cup 2/3 cup canola oil 3 tablespoons fresh lemon juice 1/4 cup Spanish olives stuffed with pimiento, drained 1 tablespoon grated lemon zest 1 clove garlic, minced
