String Cheese "Slaw"

Healthful, organic choices make packing nutritious school lunches simple. Add this fun, unusual side dish to your child’s brown-bag lunch, alongside a sandwich or wrap. For added color and nutrition, throw in some slivered sweet red peppers. “What we give our children to eat today helps determine their future health,” says Terese Allen, food editor at Organic Valley . “Childhood is when eating habits are formed. If healthy choices are made, we stand a good chance of reducing our kids’ risk of heart disease, diabetes, obesity and other diseases.” String Cheese “Slaw” Makes 6 to 8 servings

  • 1 package (6 oz.) Organic Valley “Stringles” String Cheese
  • 1½ cups carrot matchsticks (or shredded carrots)
  • 3 tablespoons chopped basil, cilantro or parsley
  • 4 teaspoons fresh lemon juice
  • 2 teaspoons olive oil
  • Freshly ground black pepper
Pull threads of cheese off each string cheese stick (not too thin). Toss with carrots, fresh herbs, lemon juice and olive oil. Add pepper to taste.
